Maca Cream Puff Pudding Cake

Ingredients:

Pudding:

  • 3 cups of milk
  • 2 Tablespoons Cornstarch
  • 3 Tablespoons of Maca
  • Pinch of Salt
  • 3/4 Cup Sugar
  • 3 Egg Yolks
  • 1 Tablespoon butter
  • 1 Teaspoon Vanilla Extract

 Cake Crust:

  • 1/2 Cup Unsalted Butter
  • 1 Cup Water
  • 1 Cup All-Purpose Flour
  • 4 Large Eggs

Whipped Topping:

  • 2 Cups Heavy Whipping Cream
  • 2 Tablespoons Powdered Sugar
  • 2 Teaspoons Vanilla (optional)

Preparation:

Pudding: In a small bowl, whisk together ¼ cup of the milk with the cornstarch. Set aside. In a medium saucepan, whisk together the remaining milk, salt, and sugar. Allow the mixture to heat over medium heat until it is steaming; do not let it boil.  While the milk heats, whisk the egg yolks in a separate small bowl. Once the milk is steaming, slowly stream ½ cup of the hot milk mixture into the egg yolks, whisking constantly. Slowly add the egg yolk mixture back to the pot, followed by the cornstarch mixture. Continue to cook over medium heat, whisking constantly, until the mixture starts to simmer and has thickened. Remove from the heat and whisk in the butter,  vanilla and Maca.  Top the pudding layer with plastic wrap touching the top of the pudding to prevent a skin from forming and serve warm or allow to chill for several hours before serving.

Pastry:  In a large heavy saucepan, heat butter and water to boiling over medium-high heat. Add flour and reduce heat to low. Cook and stir until it forms a ball and pulls away from the pan. Remove from heat and transfer to a large bowl. With a wooden spoon, beat in eggs, one at a time, beating well after each egg.  Spread in bottom and up the sides of an ungreased 9×13 inch pan. Bake at 400 degrees F for 35 minutes. Cool completely.

Whipped Topping: Wisk Heavy Whipping Cream and Powdered Sugar together until soft peaks form. Add Vanilla and mix by hand.

Assembly: Spread the Maca Pudding over the pastry crust, then put the whipped topping to cover the top of the pudding.  Lastly, Enjoy!!
