What is Gelatinized Maca?

What is Gelatinized Maca?

When you hear the word “gelatinized,” no doubt the first thing that comes to mind is something…well…gelatinous. And that probably doesn’t sound very appetizing. But the good news is, there’s nothing slimy or gross about our gelatinized maca products.

Gelatinized maca is, to put it simply, maca that has been pre-cooked in order to break down the starch content. It’s a simple process that doesn’t involve the addition of any other ingredients. There’s no gelatin involved in the process at all, and therefore whatever gelatinized maca product you purchase will be entirely vegan maca. The organic maca root is sustainably harvested from our fields in the Junin area of Peru before being sundried. Once they’re ready to be processed, the whole maca roots are heated to temperatures of about 160F, which causes the starch molecules to irreversibly dissolve. This is important, because it’s that starch content that’s sometimes responsible for the stomach upset experienced by people who take maca. The cooked maca is then ground into powder or cut up into small pieces before it makes its way to us, and then on to you.

Is Gelatinized Maca Better Than Raw Maca?

That depends on who you ask. The cooking process does result in some of the maca root’s nutrients being compromised, namely certain enzymes and Vitamin C. However, the majority of the maca’s other nutrients, including its key macaenes and macamides, will stay intact.

The main difference is simply that gelatinized maca is easier to digest.
