Maca Superfood Cappuccino Recipe

Ingredients:

  • 2 cups of hot water
  • 2 tbsp of dark cacao powder (I used Penzey’s Spices brand)
  • 1 tbsp red gelatinized maca powder
  • 2 tbsp honey or maple syrup
  • 1/2-1 tsp of cinnamon powder (I used 1/2 tsp)
  • 1 scoop of Ancient Wisdom superfood
  • 1/4 cashew nuts (for milky creaminess)

Preparation:

Place all ingredients into a high speed blender and blend until smooth.

Ingredients:

  • 2 and ½ cups nut milk (coconut or almond)
  • 4 tablespoons raw cacao powder
  • 1 tablespoon of maca powder
  • 2 dates pitted
  • Pinch of salt
  • Cinnamon to taste (optional)

Instructions:

Combine all ingredients in a blender and blend until smooth. Place ingredients in a small saucepan and slowly warm to temperature desired.

So you’re all set for beverages - now what you need is something sweet to nibble on with your hot chocolate or coffee. Baking is a fun fall activity, and we’ve got some recipes that are sure to satisfy the urge.

Maca Pumpkin Bread

INGREDIENTS

Wet ingredients:

  • 1 cup pumpkin purée
  • ¼ cup melted coconut oil
  • ¼ cup + 2 tablespoons pure maple syrup
  • ¼ cup + 2 tablespoons coconut sugar
  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons water)
  • 1 teaspoon vanilla extract

Dry ingredients:

  • 1 tablespoon of Gelatinized red maca powder
  • 2 cups gluten free oat flour
  • ½ cup almond meal
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

INSTRUCTIONS

  1. Preheat oven to 350ºF.
  2. In a bowl, mix all the wet ingredients together. Set aside.
  3. In a separate bowl mix all the dry ingredients.
  4. Incorporate the wet ingredients into dry. Mix until all the ingredients are fully incorporated.
  5. Transfer the batter into an oiled loaf pan.
  6. Bake for 50 - 60 minutes or until the top is golden brown and a toothpick comes out clean when tested.
  7. Allow bread to completely cool on a cooling rack. Slice and enjoy!

Vegan Maca Pancakes Recipe

Ingredients:

  • 1 banana, peeled
  • 1/2 c almond milk
  • 3/4 c spelt or buckwheat flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/4 t vanilla extract
  • 1 1/2 T maca powder

Preparation:

  1. Combine banana, vanilla and milk in a high speed blender, blend on highest speed to a smooth liquid.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda and maca.
  3. Pour banana milk into dry ingredients, whisk until just combined.
  4. Using 1/4 cup scoop, form pancakes onto prepared (buttered, sprayed) griddle over low heat. Pancakes will not bubble, and will easily come up to turn after about one minute. Flip and cook for another half minute or so, until cooked through.
  5. Serve with sliced banana and maple syrup.
